S’mores Cream Cheese Ball

My husband and his friends always ask me to make them sweet treats to snack on during football games.  I've been dying to make s'mores lately, but since I couldn't pry anyone away from the TV last night { both of our teams played nail-biter games and came out with a win! },  I decided to make a s'mores cream cheese ball instead.  I LOVE cream cheese balls.  They're tasty and SO easy to make!  Here is my recipe so you can indulge with us.

For the cheese ball:
16 ounces of cream cheese, softened
1/2 cup of powdered sugar
1 cup of mini marshmallows
1/2 cup of marshmallow creme
1 cup of mini chocolate chips

For the outer coating:
1/2 cup of graham cracker crumbs
1/4 cup of mini chocolate chips
1/4 cup of marshmallow bits

1. Combine all of the top ingredients together in a medium bowl.

2.  Mix it. Mix it real good.  You can use a beater if you have one, but a good spoon will work too!

3.  Spoon the mixture onto a piece of plastic wrap.  Wrap it all up, shape it into a ball, then pop it into the refrigerator for 20 minutes.

4.  While your cheese ball is setting, start making the crust.  First, crush up the graham crackers.  I used a ladle, but *bonus points* if you have a food processor to do this for you... it'll save you a lot of time!

5.  Stir in the marshmallow bits and chocolate chips, then pour the mixture onto a large plate.

6.  Remove the cheeseball from the fridge and roll it in the graham cracker mixture until completely coated.  Refrigerate for at least half an hour, then serve with graham crackers!

xoxo, Erin
