One of my best friends and I have the same birthday (April 19th yay!). She lives in NYC and I am in Charlotte so we were not able to celebrate together this year. She sent me a cookbook from her favorite bakery, Magnolia Bakery, since we couldn't share cupcakes together. I have been wanting to bake something from it and the Orange Vanilla Chip Cookies were requested because they are said to taste like a creamsicle in a cookie! I finally got around to making something from the cookbook and these cookies were too good not to share.

2 1/4 cups all purpose flour
1/2 cup sugar
3/4 teaspoon baking soda
1/2 cup firmly packed light brown sugar
1/2 teaspoon salt
1 large egg, at room temperature
1 cup (2 sticks) unsalted butter, softened
1 large tablespoon grated orange zest
1 cup vanilla chips (or white chocolate chips)
Preheat oven to 350º.
In a large bowl, sift together the flour, baking soda, and the salt. Set aside.
In a large bowl, cream the butter with the sugars until smooth, about 3 minutes.
Add the egg and mix well. Add the flour mixture and beat thoroughly. Stir in the orange zest and vanilla chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion. Bake for 10-12 minutes or until lightly golden brown.
Cool the cookies on the sheets for 1 minute, then removed to let cool completely.
