Memorial Day Recipes: Easy Strawberry Salsa

Going to a Memorial Day party and need a pot luck recipe stat? Try something fresh and sweet that will be sure to get rave reviews. PLUS, it's strawberry season so what better time to try a yummy Strawberry Salsa? I've done many variations of fruit salsa and all have been tasty but you can't argue with the simplicity of this one I found on

  • 1 lb. strawberries, diced (about 2 cups)
  • 3 tsp. balsamic vinegar
  • 2 tsp. honey
  • 1/4 tsp. kosher salt
  • 1/8 tsp. ground black pepper
  • 1 tbsp. finely chopped fresh basil
  • zest of 1 small lemon (about 1 tsp.)
  • Cinnamon pita chips

Whisk together vinegar, honey, basil, salt and pepper until thoroughly blended. In a large bowl, pour vinegar/honey mixture over strawberries and mix together until strawberries are coated throughout. Refrigerate covered until ready to serve. Salsa tastes best when it's had at least 30 minutes to marinate and all flavors to blend. Serve with tortilla chips, pita chips or apple slices.

Add a Memorial Day spin and throw in 1/2 to 1 cup of blueberries! P.S. I'd double up on the recipe if you're serving several people cause this one is gonna go FAST 🙂

*TIP: Fresh out of vinegar and honey or wanting something a little less tart? Try 2 tbsp. of your favorite jam mixed with 1/2 to 1 tbsp. water {depending on desired consistency}.
