I know you've heard that a way to a man's heart is through his stomach. Well, I'm here to tell you that while that's not all there is, there is a lot of truth in that statement. Today is mine and my hubby's 7th anniversary and rather than a night out, we opted for a cozy night at home. He requested my sweet and spicy meatballs so I thought I'd share one of the recipes that are a big hit with him and is sure to be with your man.
The beauty about this recipe is it can be made ahead so you don't have to fuss with cooking OR it's also super fun to cook together and makes for a great date night in! Now roll up your sleeves, here's the step-by-step...
First for the sauce, you're going to need the following:
- 1 cup Worchestershire sauce
- 1-1/2 cups water
- 1-1/2 cups ketchup
- 1 cup apple cider vinegar
- 2 cups brown sugar (packed)
- 1-1/2 teaspoons chili powder
I like to use dark brown sugar for a little molasses hint to the sauce but regular light brown sugar will do. Add more sugar for a sweeter, thicker sauce. Add more chili powder if you like things hot! Whisk everything together in your pot or crockpot until smooth.
Then for the meatballs, you'll need:
- 1 pound hamburger
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 medium to large shallot (minced)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
I actually prefer to use fresh breadcrumbs which you can do by sticking about 2-3 slices of sandwich bread in your food processor but in a pinch, prepared breadcrumbs do just fine. If you're wondering what the heck a shallot is, no worries, you can sub in half a white or yellow onion or even use dried onion flakes (1/4 cup to 1/3 cup to taste). You can also sub ground turkey if you're looking to cut calories but I highly recommend trying half and half on the meat. Meatballs like a little fat so the texture may be slightly off if you do all turkey but it should still stay together if you prefer this route.
I highly recommend you snag a package of food prep gloves if you don't want your hands to smell like hamburger and onion. But once you thoroughly mix everything together in a large bowl, you're all set to start making your meatballs. I just throw them straight into my pot of sauce as I make them.
Then you can put your meatballs and sauce in a oven-safe dish and cook for one hour at 350 degrees. Or you can throw in a crockpot for 6-8 hours on low. Boil some egg noodles (or other preferred noodle) and serve the meatballs and sauce over the noodles. You can also make fresh pasta if you like. It's messy but fun to make together! Maybe you even have a flour fight or two... just saying... I'll have to share my pasta recipe another day. Can't give up all my secrets in one post! 😉
